Sucrose fatty acid esters are a mixture of mono-, di-, and tri-estersof sucrose with fatty acids. The fatty acids are derived from edible vegetableor hydrogenated edible vegetable oils and fats. Sucrose fatty acid esters areintended for use to emulsify beta-carotene, which is a water-insolublecarotenoid, in a concentrated color preparation. The sucrose fatty acid estersare intended to be a part of the concentrated beta-carotene color preparationthat would be added to beverages such as soft drinks and juice beverages.
